Processing Prices Whole Carcass Deer or Antelope

Processing fee includes skinning, cleaning, washing & cooling the carcass. Boneless cutting of all fresh cuts, steaks from the hind quarters, chops from the back loin straps, roasts from the shoulders, tenderloins left whole. The remaining of the trimmings is bagged bulk in approx. 10lb bags and all is sharply frozen.

You will get your own fresh cuts back!

**We will keep the hide as a part of our processing charge.**

Whole Carcass

All Wild Game must be Tagged and REGISTERED! Your Wild Game will be refrigerated from beginning to end, to ensure a quality product. Carcass deer are preferred with the hide still attached to protect the quality of your meat. We charge $15 more for any deer brought in without a hide. A $90 deposit is required at the time of drop off and the balance is due when picked up. Any Wild Game not properly field dressed will incur a $15 surcharge.

Any head needed for mounting should be picked up promptly.

SAUSAGE

We will start making all the fresh and smoked sausages only after all fresh cuts are done. We will utilize a first week in, first week out system. Your delicious sausages will come vacuum-sealed for longer lasting flavor and quality. Beef and pork are added to your sausages and you are charged for the finished weight of the product on all sausages. Jerky, Pressed & Formed Jerky, Beef sticks & Hot Pepperoni Sticks are charged on the RAW WEIGHT.

Due to the large volume of sausage made during November & December, all venison sausages are blended together.

WILD GAME TRIMMINGS

Trimmings must be clean, boneless, and free of hair and blood clots and MUST HAVE REGISTRATION AND LICENSE NUMBERS.
Separate hatching is available upon request after January 1st. 20lbs or more of venison is required per sausage choice.

PRODUCT SAFETY REMINDERS

1) Hang deer and wash or wipe inside cavity out. Body heat, which promotes bacteria growth, will be trapped if it is laying on the ground or in a pick up box!

2) Once hanging, prop open chest cavity with a stick, so the heat can escape.

3) DO NOT DELAY in getting your deer to us, with the HIDE ON. Deer does not age when hanging due to outside temperature fluctuations.

4)PLEASE DO NOT PUT YOUR TRIMMNGS INTO GARBAGE BAG! They are made from oils and may contain pesticide and perfumes. Place your trim in coolers or food storage bags.

NOTIFICATION AND STORAGE

Due to the limited amount of freezer space available, a storage fee of $3 per day will be charged for all orders left beyond two weeks  after 1st notification by phone. Meat Shoppe is not responsible for any product that is left for 45 days after first notification by phone. Product will be disposed of after that time.
